The beginning of the end

Today, we had our second to last guest speaker, Dr. Aeriel Belk. Yesterday, we had our last full-day field trip. Tomorrow is our last Friday. We have arrived at a point in SSP where every day is increasingly important to cherish.

For now, let’s focus on Dr. Belk, who impressively managed to make us simultaneously afraid of and fascinated by ground beef. In her presentation, Dr. Belk analyzed the microbiology of the meat industry, explaining food spoilage, rumen microbiome, and food safety. Her insight reminded us to check the expiration dates on our Cup Noodles, but also that the United States has a very robust food safety system.

The coming days will be some of the most challenging throughout the entire program, as we will be putting everything we’ve done into a final manuscript. During this process, the skills and growth we’ve accumulated over the past five weeks will need to blossom. I personally cannot wait to see everyone’s final products.
